§ 02 — Become Dairy worker
As a dairyman you turn milk into cheese butter yoghurt and other dairy products. You control the processes and machinery that transform raw milk into the goods we have in the fridge and you keep a sharp eye on quality and hygiene all the way. When you are done you are skilled in a trade that combines food technology and quality.
§What do you do in everyday life?
You work at a dairy where you receive the milk, check it and control the production of, for example, cheese, butter or dairy products. You operate and monitor machines and systems, keep an eye on temperatures, acidification and maturation and take samples to ensure quality is in order. The trade is a blend of craft and technology — you must both understand the processes behind the products and be able to operate the equipment that makes them on a large scale. Hygiene and food safety are crucial in everything you do.

§How do you get started?
You typically start with a basic course at a vocational school and then need an apprenticeship at a dairy. The education alternates between school stays and practice so you learn the theory behind dairy products and run production in reality. You get paid during training and learn the trade alongside experienced dairymen.
§The way forward
As a finished dairyman you can work at dairies and food companies at home and abroad. You can specialise in certain products become a team leader or take responsibility for quality and production. If you want to go further the journeyman's certificate can be a stepping stone to further education for example as a process technologist in dairy technology or within food technology.
