History of the dairy profession
From the farm's milk chamber to modern dairy
When you train as a dairyman you enter a trade with deep roots in Danish agriculture and food production. Milk has for centuries been one of the country's most important raw materials and its processing has shaped both culture and economy.
§Milk's journey through time
Previously, milk was processed on the individual farm, where butter was churned and cheese was made by hand. Over time, production was consolidated, and shared dairies made it possible to produce products in larger quantities and with more consistent quality.
| Period | Development |
|---|---|
| Earlier times | Milk is processed at home on the individual farm |
| 1800-tallet | Common dairies combine production and raise quality |
| Omkring år 1900 | Cooperative dairies spread throughout the country |
| 1900-tallet | Mechanisation and pasteurisation improve safety and shelf-life |
| Modern times | Consolidation into larger automated dairies |
| Today | High technological level with focus on hygiene quality and export |
§The cooperative movement
The cooperative idea, where farmers came together to own their dairy in common, became very important. It made Danish dairy production strong and laid the foundation for an export that is still important to the country today.
§The craft today
Modern dairies are characterised by advanced technology, strict hygiene and high food safety requirements. You work with large facilities but the core task is still the same: making good dairy products people can trust.
