As an intestine cleaner you work with a specialised part of food production where animal intestines are cleaned and processed so they can among other things be used as natural sausage casings. It is a niche business within the slaughter and food industry where craft hygiene and understanding of the raw material are crucial. When you are done you are skilled in a trade that is an important — but often overlooked — part of meat production.

§What do you do in everyday life?

You work at a slaughterhouse or casings facility where you clean, sort and process casings from slaughtered animals. You operate and monitor the machines and systems used in the process and check the quality of the material along the way. Much of the work is about ensuring products meet strict requirements for hygiene and food safety so they can be used further in production. The trade requires care, good handling and a good understanding of the raw material.

§How do you get started?

You typically start with a basic course at a vocational school and then need an apprenticeship at a slaughterhouse or in a casing company. You get paid during training and learn the trade alongside experienced colleagues in a professionally specialized environment.

§The way forward

As a finished intestine cleaner you can work at slaughterhouses and in intestine and food companies. You can become a specialist team leader or take responsibility for quality and production. Experience from the trade gives good insight into the slaughter and food industry and you can build further with courses and further education within the food area.
