Sensory — taste texture and the meal experience

The Five Basic Tastes, the senses at play and why sensory quality is nutrition in practice

The best calculated nutrition menu is worthless if the food is not eaten. Therefore, sensory science — the study of how food is experienced through the senses — is a core competency for the nutritionist at the same level as hygiene and nutrition science. Sensory science sounds academic, but is deeply practical: it is the systematic approach behind tasting to season, assessing texture and plating so the food appeals. In a large kitchen where food is made for people you don't see eating, systematic sensory assessment is the kitchen's quality control.

§The Five Basic Tastes

The tongue registers five basic tastes: sweet, sour, salt, bitter and umami. Umami — 'savoury flavour' — was scientifically described by Japanese chemist Kikunae Ikeda in 1908 and is mainly due to glutamate, which is found naturally in ripe tomatoes, aged cheese, mushrooms, meat, stock and fermented products such as soy sauce. Everything else we call 'taste' — spicy, smoked, floral — is actually aroma, which is perceived by the sense of smell. That is why food 'has no taste' when you have a cold.

§More than taste: texture, sight, smell and sound

Meal experience is created by all the senses. Sight judges colors and presentation before the first bite is taken. Aroma awakens appetite — or warns. Texture — crispy, creamy, tender, juicy — often matters more to whether the food 'works' than the actual taste; think of the difference between crispy and soft fries. Even the sound of crispy crunch is part of the experience. In professional sensory evaluation, one therefore systematically works through appearance, aroma, taste, texture and aftertaste — and describes with precise words instead of 'good' and 'boring'.

§Sensory as a nutrition tool

In older people, both sense of smell and taste naturally weaken, and medication can enhance it. The consequence is reduced appetite — and thus risk of malnutrition, which is a widespread problem among older people in care homes and home care. Here sensory perception becomes a nutritional tool: clearer flavors (more sourness and umami rather than just more salt), aroma of freshly baked and freshly cooked, contrasts in texture and colors on the plate, and small, inviting portions can directly increase how much is eaten.

  • 02Use acid as the first approach when the dish is 'flat' — often it is not salt that is missing.
  • 03Build umami into plant-based dishes with mushrooms tomatoes and good stock so they are sensorily satisfying.
  • 04Think contrast: something crispy with the creamy, something tart with the fatty, a fresh colour on the brown dish.
  • 05Assess the food where it is eaten — the dish that left the kitchen perfect can be different after 30 minutes of holding and transport.

The last point is the central kitchen's special conditions: there is often a long time and many meters between pot and fork. Heat retention cooling reheating and transport change texture and taste and the professional task is to choose dishes and methods that can withstand the journey. Sensory science is therefore not decoration on the trade — it is the half of nutrition that determines whether the other half even reaches the body.
