The Organic Dining Mark — bronze silver and gold

How to lift and move safely without hurting your back

The Organic Dining Mark is the Danish state's labeling scheme for professional kitchens — canteens nursing homes hospitals restaurants and cafes. The mark shows what proportion of the kitchen's purchased food and beverages are organic and comes in three levels: bronze at 30-60 percent silver at 60-90 percent and gold at 90-100 percent. The scheme is administered and controlled by the Food Authority and it's free to participate. The mark has existed since 2009 and today is carried by several thousand professional kitchens.

§How the organic percentage is calculated

The organic percentage is calculated on the kitchen's purchases — either in money or in kilos — as the proportion of organic goods out of total food and beverage purchases. The kitchen chooses the calculation method itself and must be able to continuously document the share with invoices and statements. It is therefore not an assessment of individual dishes, but of the kitchen's overall purchasing pattern over time, and documentation is part of the inspection that the Food Authority conducts.

§Conversion without budget explosion

Organic raw materials are typically more expensive per kilo — nevertheless many kitchens succeed with conversion within an unchanged budget. The key is that the conversion is not a pure procurement exercise, but a change in cooking: more food from scratch, more vegetables and legumes, less but better meat, seasonal raw materials when they are cheapest, and less food waste. The money saved on meat, semi-finished products and waste finances the premium price on basic organic goods.

§Why it is a professional asset

For the nutrition assistant the organic label is more than a sign on the door. The conversion process develops the kitchen's craftsmanship — baking curing fermenting and making stock happen in much higher degree in converted kitchens — and experience with organic conversion is sought-after on the job market especially in public kitchens where many municipalities and regions have political goals for high organic percentages.
