§ 02 — About the trade
Cleaning
Professional cleaning is a trade with its own standard, its own chemistry and its own education. A cleaning technician or service assistant plans, carries out and documents cleaning in hospitals, schools, offices and food businesses — where quality is agreed to DS/INSTA 800, chemicals are dosed according to the label, and equipment is colour-coded so that contamination is not carried from one place to another.

What does a service assistant do?
A service assistant is a service worker who both cleans to a set plan and carries out a range of service functions, particularly in hospitals. Cleaning is the core: measuring up the area, choosing the method and product for each surface, and self-inspection afterwards. In hospitals the service side is added — patient and specimen transport, bed making and bed washing, tasks around the sterile services department, and receiving and serving food. One thread runs through all of it: clean and dirty are kept apart, and hand hygiene is performed at the right moments.
How is cleaning quality measured?
DS/INSTA 800 is the joint Nordic standard for setting and assessing cleaning quality, and it measures the result — how clean it is after cleaning — not how often cleaning is done. The standard uses 5 quality levels, where 1 is the lowest and 5 the highest, and the level is agreed between customer and supplier according to the function of the room. The room is divided into four object groups — furnishings, walls, floor and ceiling — assessed separately, and a cluster is a concentration of the same soil within 0.5 × 0.5 m. Inspection takes place in inspection units of up to 100 m².
What does pH mean when choosing a cleaning agent?
The pH value determines which soil a cleaning agent can loosen. The trade divides the scale into three for teaching purposes: acidic agents (pH approx. 0–5) against limescale, urine and rust, neutral ones (approx. 6–9) for daily cleaning, and alkaline ones (approx. 10–14) against grease. The surface sets the limit — natural stone and other acid-sensitive coverings cannot take acid, and linoleum cannot take strong alkali. Acidic and alkaline are never mixed, and chlorine must never be mixed with acid. The dosage is on the label: a ratio of 1:X corresponds to 1000 ÷ X ml of concentrate per litre of working solution.
Why is cleaning equipment colour-coded?
Colour coding is the trade's defence against cross-contamination — soil and bacteria being carried from one place to another on the cloth. Cloths and mops come in four colours, each belonging to its own zone: red for sanitary areas, yellow for kitchens, blue for general cleaning and green for high-level and glass cleaning. Equipment does not cross between zones, and the cloth and the cloth face are changed far more often than most people think. In hospitals colour coding is supplemented by the infection control requirements in DS 2451-10 and the national guidelines from Statens Serum Institut.
How do you train as a cleaning technician or service assistant?
The vocational education for service assistant is staged: stage 1 is cleaning technician and stage 2 is service assistant, including a specialism in hospital services. Many enter the trade through AMU — short labour market courses in cleaning services under Serviceerhvervenes UddannelsesSekretariat — which can be taken one at a time and built up alongside work. Whichever route you take, the same subjects fill it: cleaning chemistry and knowledge of materials, method and equipment, hygiene and disinfection, quality control to DS/INSTA 800, and occupational health, where wet work and working postures are the heavy items.
