Dairy worker

Start at the oldest stop and work forwards. Each stop is a little workshop: there is something to do, and one thing to take away.

    The cream that has to stand and separate

    A manor dairy built on the Holstein model

    Here is what you do

    1. Pour milk into a wide, shallow pan and leave it in the cool for a day and a night
    2. Skim the cream off the top and weigh it
    3. Try the same thing in a tall, narrow pail and compare how much you got

    What to take away

    Cream is lighter than milk and rises on its own — but slowly. That is why the pan was SHALLOW: a large surface separates more cream in the same amount of time.

    The separator splits the milk in minutes

    The Maglekilde machine works in Roskilde

    Here is what you do

    1. Spin a container of milk and feel what gets pushed out towards the rim
    2. Work out what is left behind in the middle
    3. Time yesterday's pan and today's separator, and set the two times side by side

    What to take away

    A separator creates ARTIFICIAL gravity. The heavy part — the skimmed milk — is thrown outwards, and the cream stays in the middle. A whole day of waiting becomes a few minutes.

    The dairy that everyone owns together

    Here is what you do

    1. Work out what a separator costs if one farm has to pay for it alone
    2. Divide the same amount between twenty farms
    3. Write an agreement setting out who delivers milk and who gets the butter

    What to take away

    The machine was too expensive for one farmer and cheap enough for twenty. The cooperative idea is not a fine ideal here — it is a SUM that makes a shared dairy possible.

    A dairy in almost every parish

    All across the country

    Here is what you do

    1. Put dots on a map so that the nearest one is at most an hour away by horse
    2. Work out how long the milk can be on the road before it turns sour
    3. Move the dots until no farm is left too far away

    What to take away

    Where the dairy was PLACED was decided by how long the milk could survive the journey. Distance is a food safety rule, not a question of convenience.

    The many become the few

    The Mejeriselskabet Danmark dairy company

    Here is what you do

    1. Add two dairies' output together and find the work that only has to be done once for both
    2. Work out how much further the milk now has to travel
    3. Work out what it takes for the long trip not to spoil the milk

    What to take away

    Once the cooling tank and the lorry arrived, distance stopped deciding. Economies of scale decided instead — and the number of dairies fell as fast as it had once risen.

    The dairy crosses the border

    Here is what you do

    1. Find out how many countries the milk from a single farm can end up in
    2. Write down the three things that MUST be measured the same way in two countries before the milk can be mixed
    3. Follow one litre of milk from cow to shop, and note every place it is checked

    What to take away

    When two countries' dairies became one company, the samples had to be comparable across the border. That is why measuring and record-keeping fill as much of a dairy technician's day as production itself.
