What should glass of house wine cost?
Answer: Wine in glasses should be priced so the glasses together pay for the bottle and give the same contribution as the rest of the menu. An open bottle rarely gives a full number of glasses: some is lost to tasting, cork and remnants that must be poured away. The calculator works out the cost price per glass sold with your own shrinkage and finds the glass price without and with VAT that corresponds to the food consumption the business is aiming for.
Solgte glas pr. flaske = flaskens cl × (1 − svind) ÷ cl pr. glas
Kostpris pr. glas = indkøbspris ÷ solgte glas
Glaspris uden moms = kostpris pr. glas ÷ vareforbrug (som decimaltal)
Glaspris med moms = glaspris uden moms × 1,25
Flaskepris med moms = indkøbspris ÷ vareforbrug × 1,25 (ingen svind, fordi hele flasken sælges)

Champagnen koster 220 kr uden moms. Der skænkes 12 cl, men svindet er 10 %, fordi en åben flaske mister boblerne. Huset sigter efter 35 %.
It means: Der sælges kun 5.63 glass pr. flaske, og hvert glas koster 39.11 kr i indkøb. Glasprisen bliver 139.68 kr med moms.
Ved 30 % vareforbrug og 5 glas pr. flaske skal ét glas uden moms koste ca. to tredjedele af flaskens indkøbspris.
