As an intestine technician you work in a trade built on an old idea: nothing from the animal goes to waste. Intestines from especially pigs are cleaned and processed so they can be used for among other things sausage production. It is specialised craftsmanship that today takes place with both hands and machinery.
§Why clean casings
Natural casing has been used for generations as a sausage casing. To be used the intestines must be thoroughly cleaned, sorted by size and quality and preserved so they can be stored and transported. It is this process that the gut technician masters.

The craft naturally belongs together with slaughter and food production. The intestinal technician typically works at slaughterhouses or sausage factories, where intestines are part of the overall utilization of the animal.

Today the intestine technician learns to sort and clean intestines both manually and with machines to preserve and package them and to keep track of hygiene and quality control. It is a profession where speed and care must go hand in hand.
