From manual handling to specialized machine technology
The intestine technician profession combines old craftsmanship with modern machine technology. Although cleaning and sorting natural intestines was historically purely manual work, large parts of the process now take place with the help of specialized machines that increase both pace and uniformity.
§Cleaning equipment
The first machines in the process help remove slime and contents from the intestine so manual finishing becomes easier and faster. The machines do not completely replace manual work but they take the heaviest and most repetitive parts of the cleaning.
§Calibration and sorting equipment
Calibration machines measure the casing's diameter and help sort it according to the calibre groups the industry works with. The machine provides fast, consistent first sorting but the trained eye still comes in when quality and not just diameter needs to be assessed.

§Preservation and packing
After cleaning and sorting the intestine must be preserved, typically by salting, so it can be stored and transported without deteriorating. After that it is packed, often in bundles by diameter, ready to be sent on to a sausage producer.
