The journeyman's exam — how it runs
The practical and oral exam showing you are a skilled worker
The journeyman's exam is the crown of the work after years of learning at school and apprenticeship. This is where you really show that you can put the whole trade together — craft, planning, hygiene and explanation — in one coherent task. Knowing the framework for the exam in advance makes it far less frightening to go to it.
§Two parts — practical and oral
The journeyman's exam in butcher trade consists of a practical exam and an oral exam, which are equally weighted in the overall assessment. The practical exam is set by the professional committee and consists of manufacturing specific products and creating a time schedule for the work — within a set time frame of 112 clock hours. The oral exam comes after the practical part and lasts 30 minutes including voting, where you, among other things, present and justify your time schedule and your choices along the way.
| Part 1 · The trunk | Content | Duration |
|---|---|---|
| Practical exam | Production of predetermined products according to task from the professional committee, as well as development of schedule | Up to 23 hours |
| Oral test | Presentation and voting, including on schedule and professional choices | 30 minutes |
§What are you assessed on?
The assessment is based on a combined, holistic assessment of whether you have achieved the objectives of the training — not just whether the finished product looks nice. Your ability to plan the work, keep pace, meet hygiene and safety requirements and explain your choices count, just as much as the craftsmanship itself.
- 01Planning: can you lay out a realistic schedule and follow it?
- 02Craftsmanship: are cuts products and finish in order?
- 03Hygiene and safety: do you work according to the rules all the way?
- 04Explanation: can you professionally account for your choices in the oral exam?
§How you help a person who hears voices
The best preparation happens continuously throughout your apprenticeship, not in the last week before the test. Use school stays and practice to deliberately train the skills you know are included in a journeyman's test, and ask your apprentice master and your teachers for honest feedback along the way. Also practice explaining why you do what you do — it's often just as crucial as the actual craftsmanship.
§After the journeyman exam
When you have passed you get your journeyman certificate – the proof that you are a skilled butcher. From here the road is open to everything from jobs in shops and industry to further courses and specialization. But the journeyman certificate is also a signal to yourself that the thorough preparation pays off regardless of which direction you choose afterwards.
“The journeyman's exam tests not whether you can remember everything — it tests whether you can use what you've learned under pressure.”
