The rules protecting the animal – and the robots that change the work

Slaughter is the most sensitive part of the trade, and therefore it is also one of the most regulated. At the same time, it is one of the areas where technology and automation have really moved in recent years. Here you get an overview of the rules — and of the robots and machines that are increasingly part of everyday life in a modern slaughterhouse.

§Animal welfare is legislated, not voluntary.

The EU's regulation on the protection of animals at the time of slaughter sets clear requirements for how animals must be handled and slaughtered. The animals must be spared any avoidable pain, mental distress, or suffering, and must be handled with consideration for their normal behavior. Methods that do not cause immediate death—what is called simple stunning—must be as quickly as possible followed by a procedure that ensures the animal dies, for example by bleeding. Personnel performing slaughter operations must have a competence certificate documenting that they can do it correctly.

§Robots take on the heavy lifting

In recent years, Denmark's large slaughterhouses have been investing heavily in robotic technology — among other things, Danish Crown has invested a three-digit million sum in robots that can handle pieces of the pig during removal and hanging, precisely to take the heaviest and most burdensome tasks away from employees. The goal is twofold: fewer worn-out work positions and more uniform production.

§Artificial intelligence in quality control

Automation is not just about muscle power. Artificial intelligence is also used to automate sample inspection and make quality assessments more objective and consistent than when done purely manually. For you as a slaughterer, this means that part of the practical handiwork is supplemented by data and sensors — but the professional judgment to interpret the results remains human.

§What does it mean for you as a butcher?

Automation does not remove the need for skilled slaughterers — it changes the tasks. There will continue to be a need for hands that can debone, cut and assess quality in tasks that are difficult to automate, while new tasks emerge: operating, monitoring and troubleshooting the technology that increasingly fills the floor. A slaughterer who understands both the craft and the technology around it stands strong in the future industry.

The robot lifts the heavy load — but it is still the butcher's eye and experience that determines whether the quality is in order.
