Meat quality, maturation and EUROP classification

From carcass classification to the tender piece of meat in the counter

A good piece of meat is not just about which part of the animal it comes from. It is also about how the carcass has been assessed and how the meat has been allowed to mature before it reaches the customer. As a butcher it is your job to be able to read and explain the professional concepts behind a quality piece of meat.

§The EUROP system—the common standard

All export-approved slaughterhouses in the EU classify their carcasses according to the EUROP system. The system assesses the carcass's shape and muscle fullness on a scale from E (best) through U, R, and O to P (worst), and each main class is further divided into three subclasses, so there are effectively 15 levels to assess. In addition to the shape, the fat coverage on the carcass is assessed on a scale from 1 (very little fat) to 5 (very heavy fat layer). Together, the two scales provide a common, objective measure that slaughterhouses, buyers, and authorities can rely on.

The classification is carried out by specially trained classifiers, and in Denmark the Classification Control supervises that the classification takes place uniformly and correctly across the slaughterhouses. Classification has great economic importance because it helps determine the settlement price to the farmer and forms the basis for market price statistics. As a butcher working with yield control, you encounter the system when you need to assess whether a delivery meets the agreed specification.

§Maturing makes meat tender

Right after slaughter, meat is typically tough because the muscles have not yet had time to settle. Tenderness develops during maturation, where the meat's own enzymes slowly break down some of the proteins and some of the connective tissue that holds the muscle fibers together. The longer the maturation time — within reason and at the correct refrigeration temperature — the more tender and flavorful the result typically becomes.

  • 01Wet aging: the meat is vacuum-packed and matures in its own meat juice at 0–2°C, often over a period of several weeks.
  • 02Dry aging (dry aging): meat hangs freely in a climate-controlled room for weeks and develops a stronger, nutty flavour.
  • 03Both methods require careful temperature and hygiene control so that maturing does not become spoilage.
  • 04Maturing time is adjusted according to animal species cut and desired eating quality.

§From classification to disc

When you understand the relationship between classification and maturity you can better explain to customers why two apparently identical pieces of meat can behave differently in the pan. Muscles that work a lot – like legs and chuck – have more connective tissue and become tougher than muscles that work little like tenderloin and filet. It is also this knowledge you use when you work with calculation and yield control and must assess whether a delivery or finished product meets quality requirements.
