Further and continuing education for butchers
From journeyman certificate to vocational courses, process technologist, food technologist and academy education
When you have your journeyman certificate you are not done learning – you just have the foundation. A craft like this is constantly developing and the best in the field keep improving. Fortunately there are several directions to go depending on whether you want deeper into the craft broader towards design and business or higher up in the education system.
§AMU courses – short and targeted
AMU is short labor market courses that update and expand what you already know. In the food and slaughtering sector, there are courses in areas such as slaughtering, processing and production, hygiene and risk analysis, as well as sales and concept development. They are well suited if you want to specialize in a specific task or keep up with new requirements without spending a long time in school.
- 01Slaughter, processing and production
- 02Hygiene and risk analysis
- 03Sustainability in food production
- 04Sales, marketing and concept development
§Higher education at the further level
If you want to go further, you can build a higher education on top. Process technologist is a short higher education where you can, among other things, focus on food technology and become a food technologist. Here you work with developing, optimizing and producing food — the properties of raw materials, ingredients, product development and food safety.
| Vej | Level | What it targets |
|---|---|---|
| AMU courses | Continuing education | Specialization and updates within specific tasks |
| Process technologist / food technologist | Short further education | Development and production of food quality and safety. |
| Academy education in process, laboratory and food technology | Higher education (part-time) | Middle management and production responsibility, on the side of the job |
§The way towards leadership
Academy education in process, laboratory and food technology is an option if you aim for responsibility and leadership. With a background as a butcher, such an education can qualify you to lead a production — from planning to assessing results. It is often taken part-time so you can study while you work.
§Make a plan — also for later
You don't need to know everything from the start. But it's smart to know that the doors exist: that a journeyman certificate can become an AMU course, which can become further education. Talk to your school and your trade union about the opportunities — they know the paths and can help you find the one that suits your plans.
