As a gastronome you learn the craft behind good food: from assessing a raw material to placing the finished plate in the window. It is a trade where theory and practice are inseparably linked — you understand hygiene best with your hands in the raw materials and technique sits down first when you have repeated it many times.

Good habits and preparation
Taste constantly, wash your hands often, clean up as you work, and always make a preparation list before service starts. Lean on your recipes and notes, but also develop your own judgment — the skilled chef tastes, adjusts and tastes again. Practice knife skills regularly; it only becomes second nature with habit.
Always ask your instructor or head chef when you are in doubt – especially about hygiene and allergens. It is better to ask one more time than to guess wrong with a guest's food.
