A good self-monitoring is not known by never having errors but by what happens when they do occur. If the soup only reached 18 °C after four hours the corrective action is decided in advance: discard or reheat immediately to at least 75 °C and serve right away — and note the deviation. Without recording deviations self-monitoring is just paper. This is also why falsifying sheets ('we fill them out Friday afternoon') is one of the most serious professional sins in the industry.
§The sequence
- 01Transfer all files from the card and create a backup immediately.
- 02Review and select the best images — delete what doesn't work.
- 03Adjust basic: white balance, exposure, contrast.
- 04Fine-tune colors and lighting in the selected images.
- 05Retouch as needed — remove dust, small mistakes and distracting elements.
- 06Export in the format and resolution the customer needs.
Name and archive the finished files so you can find them again in a year. Good order is part of the craft.
