Checklist: Preparation of bakery in morning

How to make a good start so the first batch is ready on time

A good MUS typically touches several tracks: your current work tasks and how they function team and wellbeing in everyday life your skills and where you want to develop and finally a look ahead toward where your role or career can move. It is a dialogue not an interrogation — you may ask your manager questions back about what the workplace needs.

§Before you start

  • 01Wash hands and put on clean work clothes and apron.
  • 02Check that workbenches and tools are clean
  • 03Turn on ovens and set to the first baking programs.
  • 04Check fridges and freezers — is the temperature okay?

§Dough, leavening and fingertip feel — everyday craftsmanship in the bakery

  • 01Take out the long-risen doughs and assess the rise.
  • 02Mix and knead the first dough of the day according to recipe.
  • 03Set dough to rise at the right temperature.
  • 04Weigh and portion ingredients for today's production.

§Baking and Wash-Up

  • 02Cool baked goods before displaying.
  • 03Stock the counter and check that the goods look attractive.
  • 04Check allergen information and labels on goods.
