Laminated doughs — puff pastry and Danish pastry

The art of building hundreds of hair-thin layers of dough and butter

Lamination is one of the pastry chef's royal disciplines. By rolling and folding a dough around a slab of butter again and again, you build hundreds of alternating layers of dough and fat. In the oven, water in the butter evaporates to steam, which lifts the layers apart — and the result is the crispy, flaking structure we know from croissants and Danish pastries.

§Puff pastry and Vienna dough — what's the difference?

Puff pastry (pâte feuilletée) is an unleavened dough where all lift comes from steam between the layers. It is used for tart bases, palmiers and meat in puff pastry. Vienna dough (and croissant dough) on the other hand is a yeast-raised laminated dough — it rises from both yeast and steam which gives a lighter more bread-like result with an airy crumb.

§Temperature is alpha and omega

The entire technique depends on the dough and butter having roughly the same plastic consistency. If the butter gets too warm, it melts into the dough and the layers disappear. If it gets too cold, it breaks in lumps and breaks the dough. Therefore you work cool, rest the dough in the cold between each tour, and avoid standing too long with your hands on the dough. A cold bakery and a cold marble slab are lamination's best friends.

You might think that more layers always give better results, but beyond a certain number, the layers become so thin that they melt together and disappear. For croissants, many bakers prefer precisely fewer, thicker layers because it gives the characteristic honeycomb structure in the crumb.

§Egg wash, rising and baking

Wiener bread should have controlled after-rise at moderate temperature (typically below 28°C) so the butter doesn't melt before it goes in the oven. Before baking, brush with egg for golden colour and gloss — but be careful not to brush cut edges as it sticks the layers together and inhibits rising. Laminated dough is baked at high heat so steam forms quickly and lifts the layers before the structure sets.

§Why is it difficult?

Lamination requires patience, planning and respect for time and temperature. It's one of the areas where the difference between an experienced and inexperienced baker becomes most apparent, and where the journeyman exam judges look closely at layering, uniformity and crust. For that very reason, it's also one of the skills that gives the most professional pride to master.

A croissant reveals all: if it is flat, the judge knows the butter was too warm.
