Knives cooling rooms and the butcher's equipment
From boning knife and saw to meat grinder, smoker and cold room
The butcher's most important tools are surprisingly simple — a sharp knife and a trained pair of hands. But a modern slaughterhouse also contains machines and equipment that make work faster, safer and more consistent. Knowing your equipment is part of the craft.
§The knives
The butcher uses several types of knives for different tasks: boning knife to cut meat free from bones, a larger meat knife to cut roasts, and a saw for bones. A sharp knife is not just a matter of efficiency, but also safety — a dull knife requires more force and slips more easily. Therefore, keeping the knives sharp is a daily routine.

§Machines can take the rough — but the fine the customised and the restored still require a carpenter with eyes and hands.
For processing, among other things, mincing machines are used for minced meat, sausage fillers to fill casings, slicing machines for charcuterie and mixers to stir the filling. The machines save time and give a uniform result, but they have sharp and moving parts and require you to use them correctly and safely.
§Cool, freeze and smoke oven
Cooling is the lifeblood of a slaughterhouse. Cold rooms keep meat fresh and outside the bacteria's growth interval, and freezing is used for longer storage. For the processed products, many slaughterhouses have a smokehouse where cold cuts and sausages are given flavor and shelf life. Controlling temperature and humidity in these systems is part of the field.
§Hygiene equipment
Clean cutting boards, washable surfaces, gloves and aprons and equipment for cleaning and disinfection are a fixed part of the butchery. Separation of clean and dirty zones and equipment to avoid cross-contamination is crucial because raw meat can carry bacteria.
§Maintenance
Knives must be sharpened machines cleaned and taken apart for cleaning and cooling systems must work and be checked. A well-maintained slaughterhouse works faster safer and delivers more uniform quality — and it extends the equipment's lifespan.
